Cut 300g of veggies ( ie., eggplant or cabbage / carrot / peas or bell pepper / carrot / peas
Sauté vegetables in oil until cooked set aside. cook 2 cups rice bring to room temp.
Heat 3 tbsp oil in separate pan add mustard seeds (peanuts optional)
Add cooked veggies to pan sauté a few minutes. Add Masala powder.
Sauté for a few more minutes and add cooked rice.
Mix well serve with Raitha.
